50% Chenin Blanc & 50% Pinot Gris. This long-macerated blend is made from 10 year old vines. Maceration and fermentation take place over 6 months in clay amphorae and the wine spends another 6 months aging in amphora. Slightly filtered at bottling. Aromas of ripe stone fruit with wild acidity that comes across as almost sour on the palate. Superbly balanced and impressive tannic structure with dried fruits on the finish.
